The Standard American Diet is quite a departure from the types of whole foods our bodies are designed to thrive on. These days, most Americans eat many highly processed foods full of refined (fiberless) carbohydrates and sugars: white bread, white rice, white pasta, pastries, cookies, pies, soft drinks, candies, table sugar, high fructose corn syrup (typically GMO), dextrose, concentrated fruit juice, refined honey and maple syrup, and much more. These kinds of foods and sweeteners, while seriously lacking in micronutrients, are also highly glycemic – they break down into simple sugars rapidly in our digestive system and cause a consequent spike in our blood sugar levels. Our ancestors did not experience these kind of rapid rises in blood sugar, and our bodies have not adapted to handle it.

When blood sugar rises rapidly from consumption of high glycemic foods, our pancreas responds with excessive secretion of the hormone insulin in an attempt to lower serum glucose levels back to normal levels (70-100 mg/dL). The insulin binds with insulin receptor sites on every cell in our body to facilitate the cell’s uptake of the sugar in our blood, to be either burned for energy production or, more commonly, converted to fat for storage. Unfortunately, the excessively high levels of insulin secreted by our pancreas after a high glycemic meal will typically cause a rapid decrease in blood sugar levels an hour or two later, resulting in a condition known as reactive hypoglycemia. Low blood sugar levels then cause us to crave sweets, and if we give in to this craving, we start the hypoglycemia roller coaster ride all over again – high blood sugar, followed by low blood sugar, followed by high blood sugar…

Our brain uses the sugar in our blood as its primary fuel. The extremely low blood sugar levels experienced during an episode of hypoglycemia cause the master glands in our brain to signal our adrenal glands to secrete the stress hormone cortisol in an attempt to raise blood sugar back to normal. Cortisol mobilizes the breakdown of tissue fats and proteins to be converted into sugar in order to get blood sugar levels back into the normal range, but cortisol also suppresses the functions of our immune system. The hypoglycemia roller coaster results in our adrenal glands working hard multiple times during each day in the attempt to maintain blood sugar stability, and this can eventually contribute to a state of adrenal exhaustion or fatigue. Someone with adrenal fatigue has difficulty raising blood sugar back to normal levels after a bout of hypoglycemia without resorting to caffeine or sugar, but these quick fixes only exacerbate the underlying problem. Adrenal fatigue affects millions of Americans and is associated with debilitating fatigue, poor immunity, food allergies, low sex drive, poor muscular strength and stamina, cardiovascular and gastrointestinal issues, poor sleep, and tendency to gain weight.

Even worse, the highly glycemic, micronutrient-poor Standard American Diet leads to a situation where insulin slowly loses its ability to communicate with our body’s cells (insulin resistance). This causes our pancreas to secrete higher and higher amounts of insulin in an attempt to lower blood sugar levels, eventually exhausting the ability of our pancreas to secrete insulin altogether – a condition known as type 2 diabetes. People with severe insulin resistance and/or type 2 diabetes have chronically high levels of serum glucose (hyperglycemia) and, if their pancreas is not yet exhausted, insulin (hyperinsulinemia). Hyperglycemia creates massive damage to body tissues by promoting inflammation and the formation of advanced glycation end products. Hyperinsulinemia creates much dysfunction in our body as well, as insulin blocks the action of many other hormones when it is present in our blood in high amounts for long periods of time. This leads to various metabolic imbalances such as high cholesterol and triglycerides, hormonal imbalances, obesity, and high blood pressure, to name a few.

Truly, damage to our body’s cells, organs, and metabolic systems begins with even the slightest elevation in insulin and blood sugar levels beyond the normal range. Maintaining stable blood sugar levels is one of the most important things we can do to support our health.
